Everyone was excited for the salmon cakes. The students shared all the different ways they’ve eaten salmon and how much they liked it, but none had ever had salmon cakes.
The aroma of sautéing veggies brought several visitors to our door wanting to know if we would have extra. The students were amazed at how many salmon cakes we made from the mixture. “This is a workout!” declared Eleazar Cruz-Castellanos as he sliced sweet potatoes to uniform pieces. All hard work was rewarded in the end. Both the salmon cakes and the sweet potato wedges were a hit. Everyone left with a take-home dish to share with their family.
