There’s nothing like a good breakfast to start the day. There’s also nothing like a good breakfast to start another semester of My Family Kitchen. Especially if it’s easy and fun to make.
The Mini Italian Frittatas on the menu at our first class were the perfect recipe in both ways — and made the first class a hit.
“It was great,” declared Genevieve Brush. “Cooking club is a very good place if you want to cook anything.”
“I would recommend it,” added Alison Reyes. “ I learned chopping and how to season stuff.”
“It was amazing,” Pablo Gomez said. “And we got to eat what we made.”
“It was delicious! “ enthused Maya Ramos.

Frittatas are an easy-to-make egg breakfast featuring healthy greens, milk, eggs and cheese for protein, and basil, salt and pepper for extra flavor. It’s a recipe that students can make at home with their families and store in the refrigerator to be heated up every day before school.
Our young chefs were a great team putting the recipe together, and excited to taste the results.
“I like that we get to make food,” Isaiah Viera said.
“Can we get seconds?” Allison asked after taking her first bite.
The Frittata recipe is great for a first class because it introduces students to all the skills they will need to be good cooks — chopping, slicing, measuring, mixing, grating, sautéing and timing to make sure nothing is overdone.
It’s also great for showing the importance of teamwork in the kitchen.
Our class proved to be a great team.

As we got under way, Pablo and Genevieve stepped up to chop the onion, Isaiah expertly cut up the basil, and Alison made short work of the Pepper Jack Cheese with the grater.
Led by Maya, everyone wanted a crack at breaking eggs, and learned that it’s safer — and less messy — to break the shells on a flat surface instead of the edge of the bowl.
From there, Pablo and Isaiah sautéd the onion and spinach in a skillet, and Maya and Alison combined milk and yogurt to add to the egg mixture.
Then it was fun time. Everyone took turns spooning the onion and spinach into shells in our muffin tin and ladling the egg mixture on top. They were happy to discover there were enough ingredients to make four extra Frittatas beyond the 12 that were planned.

As the Frittatas baked, the class set the table and waited.
“They smell so good!” they exclaimed, as Isaiah paraded them in to the cafeteria on our big white platter.
Each student quickly eyed the platter to choose a personal frittata and positive comments filled the air. 
“My mom would like this,” one student declared. “This is so good,” said another. “Mmmmmm,” said more than one, as they savored the flavors.
“It’s amazing,” Pablo said, while cradling an extra Frittata in his hand.
“In cooking club you can cook any kind of recipe if you learn more,” Genevieve said.
