We had a great first week at Holy Name that reminded us that flexibility is key!

Our class so far includes three 5th graders, twins Nelson and Nelania and their friend Lily Espinal. They all enjoy cooking at home, and all three like eggs, so our day making frittatas was bound to be a success.

Before we began, we read through the recipe and wrote a bit about how we expected the dish to taste: “Cheesy.” “Eggy.” “Flavorful.”

We got to work washing our hands, learning basic knife skills and looking over our ingredients. Then the fun began. Both girls said their favorite part was chopping onions! Nelson liked “everything.”

We did not have a stove, so we improvised by cooking the onions and spinach in the microwave before putting that and the stirred egg mixture in the muffin tins. The school oven only went to 350 degrees, but they came out fine!

We all got to try them, and they were delicious – though still a little hot!
