Tuesday, October 28, 2025 – Our cooking class continues to evolve. Scarlett Rodriguez has dropped out, as she’s now a junior coach who will be tutoring younger students. This is an honor position for her, so we wished her well and encouraged her to “keep cooking”. Today was also early dismissal for some of the students, so Aziya Reaves was missing from our cooking session. She’ll be back for the next session on November 12 (the next 2 Tuesdays are school closure days). We welcomed a new “old” student, Anadely Velez, who participated in the My Family Kitchen last year. She begged her parents to join us, so here she is! It’s good to have her back.

Today’s menu is egg salad pita sandwiches with apple, carrot and kale as a side. Everyone jumped in because there’s a lot to be chopped and cut. To provide more flavor, we added onions to the egg salad. Jasir chopped onions last week, so today it was Anadely’s turn.

She used the chef’s knife like a champ and made quick work of the job, but everyone had tearing eyes by the end of the chopping. Jasir and Ms. Evette worked on the salad, and they were glad that the carrots were already packaged into matchsticks.

Cutting and coring the apples was a bit tricky, and we understood why many cooks use a coring tool. Meanwhile, Anadely and Ms. Chris prepared hard boiled eggs according to the recipe instructions, but they were slightly undercooked and VERY difficult to peel.

We lost a lot of egg white during the process, but there was enough to make a good pita filling. Avocado and tomato were cut as additions to the sandwiches. We all made our own sandwiches and munched on a delicious meal. When we reviewed the “MY PLATE” chart, we counted 4 vegetables, 2 fruits, 1 grain, and 1 protein. There was no dairy in our meal, as we substituted mayonnaise for yogurt due to Ms. Evette not eating dairy. Everyone claimed this meal to be a success, with comments such “It’s very crunchy”,” salad is tart”, “pita filling is creamy”, and the ever popular “its delicious”. That description has been banned, and the student chefs will need to use different words next time! The student chefs were given a note for parents to remind them that the next class in Wednesday, November 12. Happy Halloween everyone!
