1 lb salsify
2 tbs oil
2 tbs good quality honey
2 tbs frech thyme, finely chopped
1 lemon
Black pepper and salt


  1. Preheat the oven to 200 degrees. Start off by preparing a bowl with ice cold water and half a lemon (press out the juice and then put the whole lemon in the bowl as well) in it. Then clean off the dirt from the salsify before peeling it, cutting it into thirds and then immediately put it in the lemon water (otherwise it will go dark really quickly).
  2. Dry off the salsify on a clean kitchen towel and then lightly toss them with oil, honey and thyme. Season with salt and black pepper.
  3. Bake in the oven for about 15 min until they still have some resistance left and immediately serve.



1 lb salsifí
2 cucharadas aceite
2 cucharadas miel
2 cucharadas tomillo picado
1 limón

  1. Precalentar horno a 200 grados. Empiece preparando un tazón con agua muy fría y ½ limón –exprima el jugo y eche también el cascaron al agua-. Limpie los salsifíes antes de pelar, partiéndolos en 1/3 y sumergiéndolos en el agua de inmediato – de lo contrario se oxidarán rápidamente -.
  2. Seque los salsifíes y revuélvalos con aceite, miel y tomillo. Sazonar con sal y pimienta.
  3. Hornear por 15 min y servir de inmediato.
