Carrot & Beet Muffins

Ingredients

  • 1½ cups all purpose flour
  • ½ cup whole wheat flour
  • 2 Tbsp ground flaxseed (optional)
  • 2 tsp cinnamon
  • 1 tsp baking soda
  • 1 tsp baking powder
  • ½ tsp salt
  • ¼ cup granulated sugar
  • ½ cup lightly packed brown sugar
  • ⅓ cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla
  • 2 cups peeled, grated raw beet
  • 2 cups peeled, grated raw carrot
  • Zest of half a lemon or orange

Directions

  1. Preheat oven to 375 degrees. Line a 12-cup muffin tin with paper liners or spray with cooking spray and set aside.
  2. In small bowl, whisk together flours, ground flax, cinnamon, baking soda, baking powder, and salt.
  3. In a larger bowl, cream sugars and oil on medium speed until light and fluffy. Add the eggs one at a time, mixing after each addition. Add the vanilla, vegetables, and zest. Gradually add in the dry ingredients with the mixer on low speed, mixing just until combined. (Overmixing will make your muffins tough).
  4. Divide batter among prepared muffin tins and bake for 20-23 minutes, until golden brown and toothpick comes out clean from the center.
  5. Cool in pans for 10 minutes before removing to rack to cool completely…best eaten warm, either fresh or “fresh” out of the microwave.

Ingredientes

  • 1½ tazas harina
  • ½ tazas harina integral
  • 2 cucharaditas canela
  • 1 cucharadita polvo para hornear
  • 1 cucharadita bicarbonato
  • ½ cucharadita sal
  • ¼ taza azúcar
  • ½ taza azúcar morena
  • 1/3 taza aceite
  • 2 huevos
  • 1 cucharada vainilla
  • 2 tazas betabel rallado
  • 2 tazas zanahoria rallada
  • Ralladura de limón o naranja

Instrucciones

  1. Precalentar el horno a 375 grados. Prepara su molde de panquecitos con papeles de los mismo o engrasando.
  2. En un tazón revuelva harinas, canela, bicarbonato, polvo para hornear y sal.
  3. En otro tazón bata azucares y aceite. Batir hasta esponjar. Agregar huevos uno por uno, resolviendo bien después de cada uno. Agregue vainilla, verduras y ralladura. Incorpore poco a poco los ingredientes secos, mezclando a velocidad baja hasta incorporar.
  4. Pasar la mezcla a los moldes preparados, hornear 20-23 min, o hasta dorados y al revisar con un palillo sale limpio.
  5. Enfriar 10 minutos antes de quitar del molde.
